Cheesecake ( Beat the Heat ) Recipe

 


Graham Cracker Almond Crust
(recipe follow
2 Envelopes
3/4 c Sugar
1 c Boiling water
1 c Creamed cottage cheese
2 pk (8 oz. each) cream cheese
Softened
1 c Heavy cream
1 tb Vanilla
2 ts Grated lemon rind
Knox unflavored gelatin

1. Prepare Graham Cracker Almond Crust. Press firmly and evenly over
bottom and sides of 9 inch springform pan. Chill.

2. Combine gelatin with 1/4 cup of the sugar in large bowl. Add the
boiling water and stir until gelatin is completely dissolved. Beat
in the remaining 1/2 cup sugar until well blended. Beat in cottage

1/2 cup ground almonds, 2 tablespoons sugar, 1/4 cup melted butter or
margarine and 1/2 teaspoon almond extractin small bowl. Stir to mix
well.
